Almond Green Beans with Lemon and Herbs


Servings: 8 servings
Time:

  • 1/2 cup toasted slivered almonds
  • 1/2 cup shredded fresh herbs (basil, chives ....)
  • 2 tbsp grated lemon rind
  • 2 lbs green beans
  • 1 tbsp each olive oil and butter
  • 1 tbsp white wine vinegar
  • 2 cloves garlic, minced
  • 1/2 tsp salt
  • 1/4 tsp freshly ground pepper



    In small bowl, combine almonds, basil and lemon rind. In large pot of boiling salted
    water, cook beans until tender-crisp, about 3 minutes. Drain well. Add oil, butter,
    vinegar, garlic to warm pot. Return beans to pot and season with salt and pepper to taste.
    Transfer to warmed serving dish and sprinkle with almond mixture.
