Banana Bread


Servings: Makes one 8.5" x 4.5" loaf
Time: 20 minutes to assemble, 1 hour to bake

  • 1 1/2 cups flour
  • 1/4 cup wheat germ
  • 2 1/4 tsp baking powder
  • 1/2 cup butter
  • 2/3 cup sugar
  • 2 eggs, beaten
  • 1 to 1 1/4 cups banana pulp (about 4 smallish bananas)
  • 1/2 cup pecans
  • 1/2 cup dried cranberries



    Blend butter and sugar until creamy. Combine flour, wheat germ and baking powder.
    Add to butter mixture, alternating with the banana pulp. Beat well after each addition.
    Fold in pecans and dried cranberries. Place batter in a greased bread pan and bake at
    350 F for about 1 hour. Cool before slicing.




    Comments: I always use parchment paper in my pan - it makes getting the loaf out
    and clean up easier.
