Brown Sugar Pecan Brownies

  • 2 1/2 cups flour
  • 1 cup unsalted butter
  • 1 tsp vanilla
  • 1 cup pecans, chopped
  • 1 lb. light brown sugar
  • 2 eggs, room temperature
  • 1 1/2 tsp baking powder



    Preheat oven to 350 F. Lightly butter 9" x 13" baking pan. Combine 1 1/4 cups flour
    with 1/3 cup brown sugar in medium bowl. Cut in 1/2 cup butter until mixture resembles
    coarse meal. Press into bottom of prepared pan. Bake 15 minutes (keep oven at 350 F).

    Meanwhile cook remaining butter and brown sugar in medium saucepan over low heat until sugar
    dissolves. Beat eggs with electric mixer in large bowl until pale yellow and ribbon forms
    when beaters are lifted. Gradually beat in brown sugar mixture. Stir in vanilla, blending
    thoroughly.

    Sift remaining 1 1/4 cups flour with baking powder. Blend in brown sugar mixture. Stir in
    pecans. Spread mixture over baked crust. Bake 25 minutes. Cool in pan. Cut in squares and
    store in airtight container.
