Chili Macaroni Casserole


Servings:6-8
Time: A half an hour to prepare, and an hour to bake

  • 1 lb. lean ground beef
  • 2 cups macaroni
  • 2 cans kidney beans (19 oz.)
  • 1 each green and red pepper
  • 2 onions
  • 2 large cloves of garlic (minced)
  • 1 jar mild salsa
  • 1 packet of chili seasoning
  • 350 gram package Monterrey Jack Cheese (grated)
  • 1/2 cup ketchup



    Start by getting the water boiling and cooking the macaroni. Chop the onions and peppers and fry
    them up with the beef. Once the meat and macaroni are cooked, combine the other ingredients
    in an oven proof dish and top with the cheese. Bake for about an hour at 350 F.



    Comments:

    A fine supper on a cold winter evening. A few tortilla chips and a salad round out the meal.
    If you prefer a hotter dish, use medium or hot salsa, or add some tabasco sauce.
