Hot Apple Cake with Caramel Rum Sauce


Servings: 8 servings
Time: 1 hour

For Cake:
  • 1 cup butter
  • 2 eggs, beaten
  • 1 tsp nutmeg
  • 1 tsp baking soda
  • 3 or 4 medium apples, peeled and chopped
  • 1 tsp vanilla
  • 1 cup sugar
  • 1 1/2 cups flour
  • 1 tsp cinnamon
  • 1/2 tsp salt
  • 3/4 cup pecans (optional) or walnuts



    Cream butter with sugar, add eggs and beat well. Blend in dry ingredients. Add apples,nuts
    and vanilla. Bake in a greased 10" pie plate at 350 F for 45 minutes.




    For Sauce:
  • 1/2 cup white sugar
  • 1/2 cup whipping cream
  • 1/2 cup brown sugar
  • 1/2 cup butter
  • 1/4 cup rum

    Combine sugars and cream in top of double boiler. Set over gently simmering water and cook 1 1/2
    hours, stirring occasionally. Add butter and cook 1/2 hour longer. Remove from heat and beat
    well. Add rum. Serve cake with sauce poured over top.

    Comments: Cake and sauce can be prepared ahead of time and reheated before serving. Cake freezes
    well. Reheat sauce gently in double boiler or it may separate. Do not reheat sauce in microwave.
    This is a simple cake to prepare. If you don't have time to make the sauce, serve the warm cake
    with ice cream.
