Linguine with Ham & Peas


Servings: 4 servings
Time: 30 minutes

  • 2 tablespoons butter
  • 1/2 pound mushrooms; sliced
  • 10 oz package frozen peas; cooked
  • 1/2 cup parmesan cheese; grated
  • 2 green onions; thinly sliced
  • 1 cup whipping cream
  • 4 oz ham; chopped
  • 1/2 cup cheddar cheese; grated
  • linguine; freshly cooked




    Heat 1 tablespoon butter in heavy large skillet. Add green onions and saute until soft. Add remaining
    butter and mushrooms and cook until mushrooms are lightly browned. Add cream and simmer two
    minutes. Stir in peas and cook about 30 seconds. Reduce heat to low, stir in ham and both cheeses
    and toss until heated through. Season to taste with salt and pepper. Serve on top of cooked linguine.
    Pass additional grated parmesan cheese.




    Comments: Very quick and easy. Leftovers are good for lunch.
