Meatballs Stroganoff
Servings: 6-8 Time: about 30 minutes First, start by cooking the noodles according to the directions on the package. In a large pot saute the onions and peppers. Add the soup, sour cream, mushrooms, Bovril and Worcherstershire sauce. Plan for about 5 meatballs per person. I usually cook this meal for six, so that works out to be a half a box of meatballs--32. Put the frozen meatballs in a bowl and microwave them for 2 minutes, then stir them and microwave another 2 minutes, then repeat for another 2 minutes. Drain the fat from the meatballs and pat them dry on a paper towel. Even though they are low in fat, a lot of fat still comes out. Put the meatballs in the sauce pot and serve over the noodles. Comments: This is a simple and quick recipe that has a touch of elegance. I usually complete the meal with 3 cans of peas and carrots and some bread or rolls for soaking up the sauce--it makes lots of it. |
