Meatballs Stroganoff


Servings: 6-8
Time: about 30 minutes

  • PC Blue Menu Swedish meatballs
  • 2 cans condensed cream of mushroom soup
  • large container of low fat sour cream
  • 1 tbsp liquid beef Bovril
  • 1/2 tsp Worchestershire sauce
  • 375 gram package of medium egg noodles



    First, start by preparing the noodles as per the cooking directions on the package.

    In a large pot combine the soup, sour cream, Bovril and Worcherstershire sauce and heat it.

    Plan for about 5 meatballs per person. I usually cook this meal for six, so that works out to be a half
    a box of meatballs--32. Put the frozen meatballs in a glass bowl and microwave them for 2 minutes,
    then stir them and microwave another 2 minutes, then repeat for another 2 minutes. Drain the fat from
    the meatballs and pat them dry on a paper towel. Even though they are low in fat, a lot of fat still comes out.

    Put the meatballs in the sauce pot and serve over the noodles.



    Comments:

    This is a simple and quick meal that has a touch of elegance. I usually complete the meal with 3 cans of
    peas and carrots and some bread or rolls for soaking up the sauce--it makes lots of it.
