Peach Muffins


Servings: 12 muffins
Time: 40 minutes

  • 1 egg
  • 1 tsp lemon juice
  • 1 cup milk (soy beverage can be used)
  • 1/4 tsp vanilla
  • 1/4 cup melted butter
  • 2 cups flour
  • 2/3 cup sugar
  • 1 tbsp baking powder
  • 1 cup peeled, diced peaches (about 3)
  • 1/2 tsp cinnamon
  • 1/2 cup sliced almonds



    Beat egg. Stir in next seven ingredients. In a separate bowl, combine flour and baking
    powder. Add to milk mixture and stir just until blended. Do not overmix. Fold in peaches
    and almonds. Grease muffin tins and fill 2/3 full. Bake at 400 F for 18 - 20 minutes.
