Souvlaki


Servings: 6 servings
Time: 20 minutes + marinating time

  • Juice of 1 lemon
  • 1/4 cup olive oil
  • 1/4 cup soy sauce
  • 1 tsp oregano
  • 3 cloves garlic, minced
  • 4 pounds pork tenderloin, cut into 1 inch cubes
  • 2 peppers, cut into 1" pieces (use different colors - red, green, yellow ...)
  • 2 yellow onions, cubed




    In a large ziploc bag, combine all ingredients. Refrigerate at least 2 to 3 hours or overnight.
    Preheat grill to medium high heat. Alternate chunks of pepper, pork and onions on skewers.
    Grill for about 10 to 15 minutes, or until pork is done. Baste with reserved marinade during
    cooking.




    Comments: As the pork cooks at a different rate than the vegetables, I find it easier to cook the pork
    separately on skewers and do the vegetables in a grill basket.
