Taco Soup


Servings: 6
Time: Less than an hour

  • 1 pound lean ground beef
  • 1 onion, chopped
  • 1 each green and red pepper, chopped
  • 1 package taco seasoning mix
  • 1 can beef broth
  • 1 (19 oz) can red kidney beans
  • 1 (19 oz) can pinto beans
  • 1 (14 oz) can whole kernel corn, drained
  • 1 (19 oz) can stewed tomatoes
  • 1 (4 oz) can chopped green chilies
  • 1/2 cup ketchup
  • 1/3 cup chili sauce



    In a dutch oven or large pot, fry the beef with the oinions and peppers. Drain and return to the pot. Stir in remaining ingredients. Simmer, uncovered for about a half an hour, stirring occasionally.



    Comments: This a good variation of chili. Serve with a hearty bread or tortillia chips.
