Zucchini Relish


Servings: 10 cups
Time:

  • 2 cups chopped green tomatos
  • 2 cups chopped peeled zucchini
  • 1 sweet red pepper, chopped
  • 1 green pepper, chopped
  • 1 large celery with leaves, chopped
  • 1/3 cup flour
  • 3 cups white vinegar
  • 2 cups chopped onions
  • 3 tbsp pickling salt
  • 4 tsps dry mustard
  • 1 1/4 tsp tumeric
  • 1 2/3 cup white sugar
  • 1/2 cup cold water
  • boiling water to cover



    Combine vegetables. Add salt and stir well. Add just enough boiling water to cover.
    Allow to stand 30 minutes.

    Pour into a sieve or cheesecloth bag and drain thoroughly. Cover with the vinegar and bring
    mixture to a boil. Meanwhile, combine mustard, tumeric, sugar and flour and blend to a smooth
    paste. Add to the vegetable mixture, mix well and bring to a boil. Boil 2 to 3 minutes.

    Pour into hot sterilized canning jars and seal.
